Crikey, I am really embracing my new healthy lifestyle. I’ve always been relatively healthy ( in moderation!!!! ( more wine anyone?!)) but I’m now really kicking it with natural whole foods unprocessed foods and including ‘super foods’ into my diet and I am starting to feel amazing! Last night I made an incredibly delish, but also fantastically ( that is a real word right?!) healthy pizza – so much better than the cauliflower based pizza I made the week before! This base is made with seeds and hemp with a topping of pesto, goats cheese and tomato. You really have to try it ‘cos it was way more tasty than a traditional pizza, so bloody easy and it comes complete with a virtual halo!!!

Staying healthy with an Asian influenced fresh tuna salad

Summer is nearly upon us -I’ve come to that conclusion being an optimistic person and the fact the snow has nearly melted and the bikinis are beginning to get a showing in all the stores – so what does a girl need to do at this time of year?? (no – a tummy tuck is NOT the answer – honestly!) but it is maybe time to cut back on the bread and spuds and start eating a little lighter. One of my favourite salads of all times is an Asian inspired fresh tuna salad. Its brimming with fresh flavours, has a deliciously little chili bite to it and positively stands up, claps you on the back and sticks a halo on your head due to its healthy nutritious state. At Home Spa Weekend

Having a night out with the girls is always something I look forward to, but the morning after a little less so! Had a fantastic night out last night with a million glasses of delicious Pinot Gris but boy my body was suffering this morning. So, with a house to myself, I decided to treat myself to an at home spa day. After an enormous lie in, I made a kale, apple n ginger juice then I made myself sweat with a tough 1 hour at home yoga session followed by some serious meditation. This alone made me feel sooooo much better ( that and the 5 large glasses of water).

Slow cooked lamb shanks

I do love living in Denver but it’s only February and I’m already over the snow. I need a beach, the sea, my bikini and a few days. Having had a shed load of snow in Blue River last week – so much we ended staying an extra day  ( ‘ roads will be too tough to travel back on my love’ which I roughly translated to ‘ too much powder to even contemplate leaving today’)  and we apparently have even more snow coming this weekend -and with another foot forecast- there’s only one thing to do – cook lots of delicious warming stews ready to scoff down when returning from the snow. An extremely easy to prepare dish I made last week was slow roasted Lamb Shanks  with roasted cauliflower.
