Quinoa, roasted grapes and edamame bean salad - Plant based whole food

Superfood Salad

Superfood and super tasty. This is so quick to make, simple yet bursting with goodness. Great to serve with a vegetarian burger as a side salad, or serve with some pitta bread and eat for lunch. Either way your halo will shine brigher as you glow with health! 

Ingredients

1 cup of cooked quinoa

2oz seedless grapes

1/2 cup cooked and shelled edamame beans

1 clove black garlic (or use normal garlic if you don’t have black)

1 tbsp finely chopped fresh mint

1 tbsp olive oil

1/2 lemon juiced

 

Method

1. Roast your grapes. Halve the grapes, and place in a roasting pan with a sprinkle of olive oil and a pinch of salt. Roast at 400f for about 20 minutes. Leave to cool

2. Add the quinoa, cooled grapes, beans, garlic and mint to a bowl. Mix the garlic in.

3. Whisk the oil and lemon together and serve over the salad just before serving.

Yup, it really is that easy!
