Vegetarian pate

Asian Inspired Pate

WOW!! This is Soooooooooooo darn good! I LOVE it!! I love the flavours of Asia and I love pate.  I know that you are more likely to get dumplings in Asia than Pate  (!!) …..but I had to bring these flavours and textures together. DIVINE – seriously. You must give this a go.  Its easy to make, full of delicious flavours, healthy and so good to keep in the fridge to add to crackers for an easy snack!

Ingredients

1/2 pound shitake mushroom halved (use button/portobello mushrooms if you can’t get shitake)

1 small onion roughly chopped

1 inch of peeled ginger root roughly chopped

1 birds eye red chili (or 1 tsp of red pepper flakes)

2 tbsp Tamari (or soy sauce)

2 garlic cloves roughly chopped

1 tbsp sesame oil plus sesame oil for frying

1 cup of toasted cashew nuts

Method

1. Gently heat a couple of tbsp sesame oil in a fry pan and add the onions, mushrooms, garlic and ginger and cook on low-med temperature for about 15 minutes

2. Meanwhile toast your cashew nuts in the oven for about 10 minutes

3. After about 15 minutes add your tamari (soy sauce) and sesame oil to the mushroom mix  and stir in

4. Blend the mushrooms and the cashews in your vitamix or blender to a creamy paste.

YUM!!!!!!  Halo inducing gourmet food!

Serve on my delicious Asian inspired crackers!
