Indian Spiced Chicken and Cauliflower Soup with Crispy Onions

I made a huge bowl of this for lunch yesterday and scoffed the whole lot!! Its bursting with amazing flavours that are guaranteed to get those saliva glands working overtime!! I NEED to make more today it was so delicious!!!  The best thing is, It’s really easy to make, quick and healthy (of course!) and the crispy onions just finish the dish off beautifully!  If you want to make it a more substantial dish just add a couple of tablespoons of cooked quinoa in there, and Robert’s your father’s brother, you have an amazing main dish brimming with health (and happiness!) waiting for you to devour it!  

Serves 4

Ingredients

1 chicken breast cut into thin small bite size pieces

1 whole cauliflower, cut into small bite size pieces

1 tbsp cumin seeds

1 tbsp curry powder

1 tsp ginger powder

1 tsp coriander powder

1/2 tsp turmeric powder

1 tsp chopped dried chili flakes

1 garlic clove, minced

1 tsp salt

2 tbsp coconut oil

1 quart chicken stock

 

For the crispy onions

1/2 onion, thinly sliced

2 tsp curry powder

1 tbsp cumin seeds

1 tbsp coconut oil

 

Method

1 In a large fry pan, heat the coconut oil and add the spices.

2. Turn heat down to medium and add the cauliflower and garlic. Fry for 3-4 minutes

3. Add the chopped chicken and brown for 2 minutes

4. Add the chicken stock and bring to a bubble

5. Add the salt and taste. (Add more if needed)

 

For the crispy onions

1. In a fry pan heat the coconut oil and add the spices

2. Add the onion slices.

3. Cook until onions crispy

Serve the chicken soup in a bowl and top with crispy onions and if you like, a little fresh coriander.

Seriously YUM and takes less than 10 minutes to make……..what’s stopping you?!!!
