Compressed Watermelon and Goats Cheese Salad with Blackberry Vinaigrette
So fresh, tasty, easy and delicious!! – Makes a great lunch or a starter for an evening meal. Compressing the watermelon, concentrates and intensifies the flavour of the it, which in turn compliments the creamy taste of the goats cheese. A drop or two of blackberry vinaigrette, a few toasted pine nuts and and some chopped mint leaves and this dish will astound you with its simplicity yet it’s amazing ‘gourmetness’ (real word)!
About 20- 25 mouth size cubes of chopped fresh watermelon
4 mint leaves finely chopped
4 oz goats cheese chopped
4 handfuls of spinach leaves chopped
1 tbsp toasted pine nuts
3 tbsp olive oil
1 tbsp blackberry vinegar
1. Place watermelon in a ziplock bag, squeeze all the air out oF it and seal. Place in the fridge with something like the weight of 2 apples on the bag and leave for 2 hours. Alternatively, if you have a food sealer, seal the watermelon with your sealer and place in the fridge
2. Make your own goatscheese http://clairepreen.com/2016/08/making-your-own-goats-cheese/#more-996 or buy some and slice 4 rounds off the cheese and chop into smallish pieces (see picture)
3. Make the dressing. Emulsify the oil with the vinegar using a hand held blender.
4. Compile the salad. Take the watermelon out the fridge and divide into 4 . Place spinach leaves on a plate, add the watermelon, the goats cheese, top with the mint and the pine nuts and drizzle the dressing over.
All you have to do now is polish that halo, sit down and tuck in to your delicious, fresh and healthy salad just bursting with flavour.
