Rehydrate With Coconut Water (with a cunning little stir fry recipe!)
Holidaying in Maui and loving the fresh fruit that is available here – pineapples, bananas and coconuts especially. Stopped at the COCONUT CABOOSE yesterday – just loved it! Freshly picked coconuts, first of all pierced so you can drink the nutrient dense coconut water then halved and the fresh young flesh of the coconut freed from the shell ready to chow down on.
They also made a delicious ‘coconut ice cream’ which was made 100% from coconut – the flesh pressed and 1gm of coconut sugar added then frozen – it was delicious!!!
Coconut water is a great addition to your diet and can be used in a magnitude of ways. Here’s a great recipe that allows you to include coconut water and enjoy their nutritious benefits
Stir Fried Veggies
1 large bowl of your fave veggies, chopped into bite size pieces. I love book choi, snap peas, and cauliflower
1 red chilli finely chopped
I clove garlic finely chopped
1 inch garlic finely chopped
1 tbsp finely chopped coriander
1 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp coconut water
oil for frying (I use olive oil)
1. Heat oil over high heat
2. Add all the veggies, the chilli, garlic and ginger
3. Fry continuously stirring for 2 minutes
4. Add oyster, soy and coconut water and heat until bubbling
5. Take off heat, stir through the coriander.
