Low carb chocolate and coconut macaroons - Plant based whole food

Low Carb Chocolate & Coconut Macaroons

A delicious and easy sweet treat to make, that both you and your kids will love!

Ingredients

2 c ups unsweetened shredded coconut (extra for rolling the macaroons in)

1/2 cup almond flour or meal

1/2 cup of coconut oil

6 tbsp monkfruit sugar or 2 tbsp of date paste 

1 tbsp raw cacao

1 tsp vanilla exract

2 eggs

pinch of salt

Method

  1. Put all ingredients into a mixer or even a blender and mix well.
  2. Roll into little balls
  3. Roll the balls in the extra coconut to coat
  4. Bake on a silpat mat or parchment paper at 350F for 15 minutes or until golden brown
