Low Carb Easy Flatbread

I’m still wearing the excess of Christmas round my middle so have decided I need a week or two to rid myself of the extra pound or twenty! For me, the easiest way of doing that is lowering my carb intake. I never look to lower my fruit or veg load when lowering my carbs, but look to other areas such as bread and grains. The only problem with that is a) bread (or wraps) are such an easy ingredient to incorporate into your daily eating and b) I love bread!!!

I have come up with a delicious low carb alternative that is also very healthy and very easy to incorporate into your daily life! It’s incredibly easy to make, and also very quick.

Low Carb Flatbread


1 Cup of coconut flour

1/4 cup of psyllium husk

1 tbsp peppitas chopped

1/4 cup coconut oil melted

1 tsp baking powder

1 tsp salt

hot water to mix



Mix the coconut flour, baking powder, salt,  psyllium and peppitas in a bowl.

Stir in the coconut oil.

Add enough hot water so the mixture forms a dough.

At this stage, you can ball the dough and keep it in a ziplock bag in the fridge and use it as required.

To make a flatbread:

take a handful of dough and roll it out between two pieces of grease proof paper – or if you are in a rush, flatten it out in your hands!

place in a hot dry frypan and cook until brown on each side.

voila – something that is low carb, delicious, healthy, easy to use and make that will fill you up!
