Low Carb Delicious Muesli Bread

This is a fantastic nutritious treat to keep on the side for a healthy mid morning or afternoon snack. Easy and quick to make, it has coconut flour which keeps the carbs low and the gluten away!


1/4 cup of coconut flour

1/4 cup of muesli + 2 tbsp muesli

1/4 cup of melted coconut oil

4 eggs

pinch of salt

8 pitted dates



1. Mix all the ingredients except the 2 tbsp of muesli together in a blender.

2. Add the 2 tbsp of muesli to add some texture

3 Pour onto Silpat or a greased tray and bake at 375 for about 20 minutes until golden brown.


I love this muesli bread just as it is, but my children like it  a little sweeter so I serve it up for them with some of my delicious date paste
