Low carb, gluten free bread

Gluten free, low carb, high in fiber, nutritious………what’s the catch? Hmmmmmm – no catch!  It’s also very simple to make!

Ingredients

1/2 cup coconut flour

1/4 cup of melted coconut oil

3 eggs + 3 egg whites

Pinch  of salt

1/2 tsp apple cider vinegar

1/2 tsp baking soda

Method

1.Sieve the flour into your blender (or ensure its de-clumped!)

2. Add the rest of the ingredients and blend to a smooth batter

3. Pour the batter into a well oiled small loaf tin and bake for about 40 minutes at 375F until top of loaf is brown.

 

Serve with some delicious date paste and enjoy!
