Chocolate banana ‘ice cream’ tart

Eating this you would be excused for thinking it is packed with cream and sugar. But guess what?….it’s not!!!! it is an all healthy, sublime and decadent dessert that anyone can make. Get your halo ready and prepare to be amazed!

First make the base by making double the recipe of my raw chocolate brownie mix and add a banana

Raw Brownie Base


1 cup raw cacao

2 cups of walnuts

2 tbsp coconut oil

16 pitted dates

1 banana

Whiz all the ingredients together and spoon into a parchment paper lined tart tin and press down. Place into the freezer

Chocolate Banana Ice Cream Topping


3 bananas

2 avocados

8 pitted dates

2 tbsp yacon syrup

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp all spice

Whiz all the ingredients together and then either pipe or spoon over the base. Cover and freeze. Top with some chopped walnuts if you like for decoration just before serving. Serve frozen and enjoy!


Walnuts: a perfect tiny package of protein, healthy fats, fibre, antioxidants, vitamins and minerals

Raw cacao: a true superfood with a high density of essential nutrients, packed with antioxidants, calcium, magnesium iron and also vitamins E, B1 B2, B3, B5 and B9.

Dates: high in fibre, iron,  magnesium, potassium plus vitamin A and K. Also to a slightly lesser degree copper, B6, and manganese.

Coconut oil: ‘ healthy‘ fats – yes, saturated fats, but more importantly, medium chain triglycerides which are metabolised differently to normal saturated fat. It also contains the fatty acid Lauric acid.

Bananas: a conveniently packaged tasty variety of vitamins and minerals such as vitamin B6, A and C,  potassium, magnesium, folate plus dietry fibre.

Walnuts: a great prostate and breast cancer fighter, great for the heart, an anti inflammatory and also fantastic at fighting free radicals. Walnuts are also good for men’s fertility and support brain health ( feed your man walnuts – smart and fertile!!) Walnuts do have a slightly bitter skin round them which we are taught to ‘rub off’ with a towel before using. 90% of the antioxidants are found in the skin so is good when possible to leave them on.

Raw cacao: depression! One of the reasons chocolate is so well loved is the theobromine within the raw cacao which is a natural stimulant that can help depression . Cacao is also a great free radical fighter. Us girls know why we reach for chocolate every month, as cacao can help reduce PMS symptoms. A list of other benefits include aid to digestion, lowers bad cholesterol,  helps heart and brain function and can reduce inflammatory conditions

Dates: lowers bad cholesterol and good for colon , breast, , prostate, lung and pancreatic cancer . Also anti-infective, anti-inflammatory and anti-hemorrhagic. Free radical fighting, energy giving little bullets!

Coconut Oil: oil and fat has had such a bad rap in the past 2 decades but more research has found that fat is not only not bad for you but certain fat are very good for you. The fat from coconut oil being one of them!  It is a quick source of energy, can actually  help you burn more fat and keeps hunger at bay. It also can have therapeutic effects on brain disorders and Alzheimer. It also can kill bacteria, viruses and fungi and it can reduce seizures.

Bananas: great for cardiovascular function by lowering blood pressure, blocking cholesterol absorption and generally lowering your risk of heart disease. The also have prebiotic functions which help towards keeping a healthy gut.
